Bojo do Luar's Azal Pét-Nat is a sparkling wine hailing from Portugal's Vinho Verde region. It's crafted exclusively from the rare Azal grape variety indigenous to the southeastern part of Vinho Verde.
The winemaking process involves fermenting the grapes with skin contact for approximately four weeks in larg amphoras. Ground chestnut flowers are introduced during fermentation, a traditional method employed to stabilize the wine naturally. Before fermentation concludes, the wine is pressed and transferred to stainless steel tanks, where it is cooled and held until February. It is then bottled unfiltered, allowing fermentation to finish in the bottle, resulting in its characteristic effervescence. A minimal amount of sulfur dioxide is added at bottling to ensure stability.
In the glass, this Pét-Nat presents a dark, cloudy profile with a vibrant effervescence. On the nose, it exudes enticing aromas of jasmine and ginger, complemented by notes of kiwi and pear. The palate is marked by a refreshing acidity and a mineral undertone, with grippy tea-like tannins adding structure and complexity. The finish is crisp and invigorating.
This wine pairs well with fried appetizers or a charcuterie plate.
