André Heucq's Héritage Assemblage Extra Brut Champagne is a meticulously crafted blend of 40% Chardonnay, 30% Meunier, and 30% Pinot Noir, sourced from vineyards in the Vallée de la Marne, specifically Cuisles and Baslieux-sous-Châtillon. The vines, averaging 30 years in age, thrive in soils rich in limestone and clay, particularly illite, contributing to the wine's distinctive minerality.

Fermentation occurs primarily in stainless steel tanks, with 30% of the wine vinified in oak barrels, followed by partial malolactic fermentation. The Champagne matures on its lees for 60 months, enhancing its complexity and depth, before being disgorged with an Extra Brut dosage.

In the glass, it displays a deep golden hue, animated by a fine, persistent effervescence. The nose offers a complex bouquet of white fruits, fresh baked bread, and honey, plus notes of white pepper and herbal tea. On the palate, it opens with fresh acidity, leading to a rich and balanced mid-palate, and then a long mineral driven finish.

This Champagne pairs exceptionally well with white meats and tender fish dishes, such as sole in a creamy sauce, and complements aged cheeses.
