Clément Baraut's Savennières "Le Pitrouillet" is a white wine from the Loire Valley, crafted exclusively from 100% Chenin Blanc grapes. The grapes are sourced from the lower section of a north-facing parcel in Savennières, characterized by sandy decomposed schist and sandstone soils over a schist bedrock. Cultivated using biodynamic practices, the vines are tended with minimal intervention to preserve the purity of the fruit. Harvested at optimal ripeness, the grapes undergo gentle pressing, followed by natural fermentation with indigenous yeasts. The wine is then aged for eight months in neutral oak barrels, allowing it to develop complexity without the influence of new wood.
In the glass, "Le Pitrouillet" displays a golden-yellow hue. The nose is fresh and fruity, offering aromas of poached pear and citrus fruits. On the palate, it is balanced with mouth-watering acidity, showcasing a concentration of mineral notes, complemented by a saline finish.
This wine pairs excellently with rich fish dishes like salmon or tuna, poultry, and mild, soft cheeses.
Clément Baraut, originally from Burgundy, has been instrumental in Savennières' progress as an appellation. His approach to viticulture is inspired by Goethe’s sensitive and intuitive apprehension of nature, treating plants with empathy and limiting interventions to keep them healthy.
