The 2020 Corison Cabernet Sauvignon is a meticulously crafted wine sourced from three benchmark vineyards in Napa Valley's St. Helena AVA: Sunbasket Vineyard, Grech Vineyard, and Hayne Vineyard. These sites feature Bale gravelly loam soils, contributing to the wine's distinctive character.
Fermentation occurs in closed-top stainless steel tanks, followed by 20 months of aging in French oak barrels, 50% of which are new. This process imparts subtle oak nuances and enhances the wine's complexity.
In the glass, it displays a deep garnet hue. The nose reveals aromas of black cherries, cranberries, and black pepper. The palate offers a harmonious balance of vibrant acidity and firm tannins, leading to a long, elegant finish.
This Cabernet Sauvignon pairs well with grilled meats, hearty stews, and aged cheeses. Its structure and depth make it suitable for both immediate enjoyment and extended cellaring.
