Eminence Road Sparkling Riesling

This lightly sparkling wine offers a balance of freshness and subtle richness, shaped by an extended, natural bottle fermentation. Made from grapes crushed, destemmed, and pressed before a long stainless-steel fermentation, the wine was bottled in October 2021 under crown cap with a touch of sugar added. A slow, secondary fermentation in bottle—still ongoing we suspect—has created a gentle effervescence and a distinctive character. The wine was not disgorged and remains unfined and unfiltered, preserving texture and authenticity.

Aromatically, it shows peach and brioche, leading into an off-dry palate lifted by fine acidity. The bubbles are soft and subtle, felt primarily at the back of the mouth, carrying flavors through to a zesty lime finish.

This is a versatile sparkling option, with enough fruit and richness to complement spicy dishes while its freshness makes it a natural pairing for shellfish and seafood.
