Gaintza Aitako Blanco is a distinctive white wine from Spain's Getariako Txakolina region, crafted predominantly from 100-year-old Hondarrabi Zuri vines, with a small addition of Chardonnay. The name "Aitako," meaning "from the father" in Euskera, honors the first generation of family winemaking.

The vineyards are situated approximately 1,500 feet from the Atlantic Ocean, perched on bluffs overlooking the water and the town of Getaria. The soils here are composed of clay and limestone, and the climate is mild but wet.

In the glass, Gaintza Aitako Blanco presents a bright green-yellow hue. The nose reveals high-toned aromas of lemon, quince, green apple, and white flowers, intermingled with citrus peel and mineral notes. On the palate, it is weighty yet austere, with a beautiful balance between effervescent acidity and intense concentration. The finish is bone dry and full of minerality, with impressive length.

This wine pairs wonderfully with seafood, particularly fried preparations. It also complements anchovies, olives, and dishes with strong umami components.
