Eduard and Stephanie Tscheppe-Eselböck, the visionaries behind Gut Oggau, restored a 17th-century winery in 2007, converting it to biodynamic farming. Their "Winifred" is a biodynamic rosé from Austria's Burgenland region, crafted from Blaufränkisch and Zweigelt grapes. Hand-harvested and destemmed, the grapes ferment naturally in used oak barrels, followed by approximately eight months of aging on lees without bâtonnage. Bottled unfined, unfiltered, and without added sulfur, this wine embodies minimal intervention winemaking.
In the glass, "Winifred" displays a pale pink hue. The nose offers fresh red berries, subtle spice, and delicate floral notes. On the palate, it delivers crisp acidity and pronounced minerality, with flavors of pomegranate, red currant, and a touch of lime. Its vibrant character makes it an ideal companion for grilled seafood, light salads, or fresh goat cheese.
