Hillrock Estate Distillery's Solera Aged Bourbon is a pioneering American whiskey, distinguished as the first to employ the traditional solera aging method, a technique historically reserved for Sherries, Ports, Madeiras, and Cognacs. This intricate process involves a tiered system of barrels, where a portion of whiskey is periodically drawn from the lowest tier and replenished with younger spirit from above, ensuring that no barrel is ever fully emptied. Over time, this method fosters a harmonious mingling of ages, enhancing depth and complexity.

The bourbon is finished in 20-year-old Oloroso Sherry casks, imparting distinctive floral notes intertwined with flavors of fig, roasted walnuts, candied fruit, and a touch of spicy rye. On the nose, it reveals aromas of caramel, dried fruit, vanilla, oak, and spice, accented by an elegant floral note. The palate is full-bodied, opening with rich notes of brown sugar, molasses, and toffee, followed by roasted corn, clove, and cinnamon. The finish is long and balanced, with Oloroso sherry notes of walnut, fig, and candied fruit merging with caramel and butterscotch.
