Produced by François‑Xavier Dauré at Domaine des Lampyres in Roussillon, this certified organic and vegan red is a blend of approximately 90% Syrah and 10% Carignan grown on schist soils. The wine undergoes 7 days of skin maceration and whole‑cluster fermentation in cuve, followed by extended aging in 10 hL sandstone amphora with minimal sulfur. It pours dark and opaque with brooding aromas of sour cherry, plum, and dark berry fruit. On the palate, it’s medium-bodied and lively—showing bright red fruit, saline minerality, and herbal umami hints with a distinct fermented‑cherry tang. The finish is textural, slightly spritzy, and firm yet refreshing—offering a rustic, terroir-driven expression of Roussillon.
