Sustainable and Organic

Los Conejos Malditos Tempranillo Carbónico is an organic red wine from the Vino de la Tierra de Castilla region in Spain, produced by Bodegas Más Que Vinos. Crafted from 100% Tempranillo (locally known as Cencibel), the grapes are sourced from 50-year-old bush and trellised vines situated at elevations between 750 and 800 meters. The vineyards are characterized by limestone and clay soils, and the region experiences a continental climate with significant temperature variations. The winemaking process involves spontaneous fermentation with indigenous yeasts, utilizing 50% whole clusters and 50% destemmed grapes. Following fermentation, the wine undergoes malolactic fermentation in cement amphorae and is aged for six months on fine lees, enhancing its texture and complexity. Bottled unfiltered with minimal sulfur addition, this wine maintains its natural character.

In the glass, the wine displays a vibrant cherry color. The nose is expressive, offering aromas of red berries, cherries, and hints of plum. On the palate, it is medium-bodied and juicy, with fresh acidity and flavors of red berries, cherry, and licorice. The finish is medium-long and pleasant.

This wine is best served slightly chilled. It pairs well with appetizers, pasta dishes, and barbecues, making it a versatile choice for a variety of occasions.

The name "Los Conejos Malditos," translating to "The Damned Rabbits," humorously references the challenges vintners face from rabbits that are particularly fond of the high-quality grapes, often leading to reduced yields.
