Mariotti's Bianco dell'Emilia "Smarazen" is a frizzante white wine from Italy's Emilia-Romagna region, specifically the Bosco Eliceo area near the Adriatic Sea. This wine is crafted from a blend of 70% Trebbiano Romagnolo and 30% Malvasia di Candia, sourced from exceptionally old vines, some exceeding 100 years in age, rooted in sandy soils.

The winemaking process employs the metodo ancestrale, starting fermentation with native yeasts in tanks, followed by a secondary fermentation in the bottle achieved by adding grape must from the same vintage. This traditional method results in a naturally sparkling wine with a slight cloudiness.

In the glass, "Smarazen" presents a pale straw-yellow hue with a gentle effervescence. The nose is yellow citrus, complemented by herbal and salty-savory notes. On the palate, it is dry and refreshing, featuring flavors of citrus and herbs, a subtle pét-nat fizz, and a chalky minerality.

This versatile frizzante pairs well with seafood dishes, light appetizers, and fresh salads, making it an excellent choice for warm-weather enjoyment. Given its unfiltered nature, locals often gently swirl the bottle before serving to incorporate the lees, enhancing its texture and flavor.
