Winery Sixteen 600's Severson Vineyard Cabernet Sauvignon is a distinguished red wine from Sonoma Valley, California. The Severson Vineyard, located in the southwestern end of the valley, is one of the few valley floor vineyards farmed by Phil Coturri. This area is known for its rocky, gravelly alluvial fan soils, which Coturri refers to as "Sonoma's Left Bank." The vineyard's unique terroir, with cool, windy nights and long, hot summer days, allows the grapes to ripen fully while maintaining balance.

In the glass, this Cabernet Sauvignon presents a deep ruby hue. The nose offers aromas of dark fruit, flinty tobacco, and a gravelly minerality. On the palate, it is rich and intense, with well-structured tannins and a fleeting lightness across the finish.

The wine is fermented in open-top stainless steel tanks, with a three-day cold soak and native yeast fermentation, followed by a 21-day maceration. It is aged for 22 months in neutral oak barrels, allowing for slow aging and mellowing of the tannins while retaining the singularity of the terroir.

This Cabernet Sauvignon pairs well with grilled meats, hearty stews, and aged cheeses. Its complexity and depth make it suitable for both immediate enjoyment and extended cellaring.
